Pour the yeast into the centre of the flour. Add some warm water and stir it round and round with a wooden spoon. Now pour in the rest of the water and mix the dough with your hands. Mash the two bananas with a fork and work them into the dough. If the dough is too sticky, add some more flour and keep mixing and kneading until you have a ball of elastic dough.
Cover the bowl with a cloth and leave it in a warm place, such as above the hot water tank, for 2 hours. The dough will have risen to double its size and be soft and puffy. Slap it down with your hands and keep throwing the dough around the bowl. Have ready a loaf tin, warmed and greased with a little oil. Put the dough into the loaf tin and leave it for half an hour, or until it has again doubled in size.
Preheat the oven to a high heat, 450 degrees Fahrenheit, 230 degrees Centigrade or gas number 8. Put the loaf in the oven and after ten minutes lower the heat to 400, 205, or no. 6. Leave the loaf in the oven for a further 30 minutes and then turn it out of its tin and leave it to cool a little on a rack.
